Adapted from Scotch Pear Cocktail recipe to use SIA Blended Scotch Whisky in place of Single Malt and apple juice in place of Pear Juice. Recipe also shows how to make the Rosemary Syrup detailed below.
- 2 oz SIA Scotch Whisky
- 2 oz Apple Juice
- 1 oz Fresh Lemon Juice
- ¾ oz Rosemary Simple Syrup
- Garnish: Rosemary Sprig
Fill a rocks glass with ice. Build the drink by adding Scotch, Apple Juice, Rosemary Simple Syrup and Lemon Juice together, in that order. Stir. Serve the cocktail with a Rosemary Sprig, for garnish. For the Rosemary Simple Syrup: Mix together the sugar, water, and rosemary together in a saucepan. Over medium heat, bring the mixture to a simmer and cook for 15 minutes. Let cool overnight at room temperature. Strain off the rosemary. You can store simple syrup in a bottle refrigerated for up to four weeks.
